who are we-
We met while working at a coffee shop in the late 90’s and bonded over an affinity for single origin coffees. A few years later, after many trips together and a few years apart, we got married. A couple years after on a week long trip called Cycle Oregon (think 2000 people in lycra, a traveling tent village, riding bikes all day with great food, coffee, beer and wine and an incredible sense of community and accomplishment), the idea of Breakaway was born. Fast forward a few years, a couple kids and a bunch of pets later, we relocated to North Carolina and eventually settled in to Briar Chapel. “Wow this neighborhood would be great if there was good coffee and someplace to get food” came up a lot and so we pulled the trigger and opened the original Breakaway in the Fall of 2016. The road riding in Chatham was great and Briar Chapel had a great and growing trail network. We built Breakaway on the premise of “Great Food, Great Drinks and Great People”, inspired by Cycle Oregon, and it’s been incredibly gratifying to have people tell us that Breakaway has become their “3rd Place” (home and work being 1st and 2nd).
A few more years, after driving down North Greensboro St. in Carrboro and spotting a new building that looked right for another Breakaway and drawn to the area because of it’s similarity to where we both grew up (walkable community with values that we share), we opened Breakaway Carrboro with the intension of spreading our belief in “Great Food, Great Drinks and Great People.”

Overview
Join our dynamic culinary team as a Sous Chef/Line Cook leading our Monday thru Friday Dinner Service, where your passion for food and leadership will shine! In this energetic role, you will be instrumental in preparing exceptional dishes, supervising kitchen operations, and ensuring the highest standards of food safety and quality. This position offers an exciting opportunity to showcase your culinary expertise in a fast-paced, casual dining environment while leading and inspiring a talented team of kitchen professionals. Your dedication will help create memorable dining experiences that delight our guests and uphold our reputation for excellence.
This position allows for a great amount of autonomy and creativity in participation in quarterly menu updates.
Responsibilities
Prepare and cook high-quality menu items with precision, consistency, and creativity, adhering to established recipes and presentation standards.
Supervise daily kitchen operations, including managing shifts, coordinating food production, inventory and overseeing food handling procedures to ensure efficiency and safety.
Lead, motivate, and manage kitchen staff to foster a collaborative and productive work environment, including supervising team members and providing mentorship.
Maintain strict compliance with food safety sanitizing procedures, health regulations, and sanitation standards to ensure a safe dining environment for all. All hands on deck cleaning is a must.
Assist with menu planning, inventory management, and cost control measures to optimize food quality while minimizing waste.
Oversee inventory control processes, including ordering supplies, managing stock levels, and reducing spoilage through effective inventory management practices.
Support catering events by preparing large quantities of food efficiently while maintaining quality standards when necessary.
Qualifications
Proven experience in fine dining establishments with a strong background in food preparation, kitchen management (ServSafe person in charge certification) , and culinary techniques.
Demonstrated professionalism and supervisory experience leading and motivating kitchen team members to adhere to standards and meet expectations.
Familiarity and knowledge with consistently practicing food safety sanitizing procedures
Demonstrated experience withinventory control, and cost management practices within the food industry.
Strong leadership skills with the ability to manage teams effectively while maintaining high standards of hospitality and service excellence.
Excellent communication skills paired with a proactive approach to problem-solving in a busy kitchen setting.
Able to work effectively and respectfully with others, including across shift teams and front and back of house.
